Ingredients

  • 12 Cremini Mushrooms
  • 6 Medjool Dates
  • 1/2 cup Walnuts
  • 1 tablespoon Sunflower Seed Butter
  • 1/4 cup Breadcrumbs
  • 1/4 teaspoon Turmeric
  • 1/4 teaspoon Cinnamon
  • 1 tablespoon Olive Oil
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Preheat oven to 375°F (190°C). Remove stems from mushrooms and set aside.
  2. 2Finely chop the mushroom stems, dates, and walnuts.
  3. 3In a bowl, combine the chopped mushroom stems, dates, walnuts, breadcrumbs, sunflower seed butter, turmeric, cinnamon, salt, and pepper.
  4. 4Stuff the mushroom caps with the mixture.
  5. 5Drizzle olive oil over the stuffed mushrooms.
  6. 6Bake for 20 minutes, or until mushrooms are tender and filling is golden brown.
