Ingredients

  • 3 cups Self-raising flour
  • 1/2 tsp Salt
  • 1 cup Dairy-free milk
  • 2 tbsp Golden syrup

Instructions

  1. 1Preheat your oven to 200°C (400°F).
  2. 2In a large mixing bowl, combine the 3 cups of self-raising flour and the 1/2 teaspoon of salt, stirring them together until well mixed.
  3. 3Gradually pour in the 1 cup of dairy-free milk, mixing with a spoon or your hands until a soft, shaggy dough forms and all the flour is incorporated.
  4. 4Turn the dough out onto a clean, dry countertop or a large cutting board. Gently knead the dough for 2-3 minutes until it just comes together into a smooth ball, then shape it into a round loaf about 6-7 inches (15-18 cm) in diameter.
  5. 5Line a baking sheet with parchment paper. Carefully place the round loaf onto the center of the prepared baking sheet.
  6. 6Bake for 25-30 minutes in the preheated oven, until the damper is golden brown on top and sounds hollow when you tap its bottom with your knuckles.
  7. 7Immediately after removing the damper from the oven, while it is still warm, brush the top generously with the 2 tablespoons of golden syrup. Allow the damper to cool slightly on a wire rack for at least 10-15 minutes before slicing it into wedges and serving.
