Ingredients

  • 1.5 pounds Cod Fillets
  • 1.5 pounds Potatoes
  • 1 medium Onion
  • 2 cups Dairy-Free Milk
  • 2 tablespoons All-Purpose Flour
  • 2 tablespoons Olive Oil
  • 0.5 cup Breadcrumbs
  • 2 tablespoons Dairy-Free Butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Peel and slice potatoes thinly. Boil until partially cooked (about 10 minutes).
  3. 3Sauté sliced onion in olive oil until translucent.
  4. 4In a saucepan, whisk together dairy-free milk and flour over medium heat until thickened. Season with salt and pepper.
  5. 5In a baking dish, layer potatoes, cod fillets, and sautéed onions. Pour dairy-free white sauce over the layers.
  6. 6Combine breadcrumbs and melted dairy-free butter. Sprinkle over the top of the gratin.
  7. 7Bake for 30-35 minutes, or until golden brown and the cod is cooked through.
