Ingredients

  • 2 lb Yuca
  • 6 cups Water
  • 1 tsp Salt
  • 1/4 cup Olive oil
  • 6 cloves Garlic
  • 1/2 cup Sour orange juice (or equal parts orange juice and lime juice)
  • 1 tsp Dried oregano
  • 1/2 tsp Cumin
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Peel the yuca and cut it into 2-inch pieces.
  2. 2Place the yuca in a large pot and cover with water. Add 1 tsp salt and bring to a boil. Reduce heat and simmer for 20-25 minutes, or until the yuca is tender and easily pierced with a fork.
  3. 3While the yuca is cooking, prepare the mojo sauce. Heat olive oil in a small saucepan over medium heat. Add minced garlic and cook until fragrant, but not browned.
  4. 4Stir in sour orange juice (or orange juice and lime juice), oregano, cumin, salt, and pepper. Bring to a simmer and cook for 2-3 minutes.
  5. 5Drain the yuca and transfer it to a serving dish. Pour the mojo sauce over the yuca and serve immediately.
