Ingredients

  • 250 g Whitebait
  • 2 tablespoons Gluten-free flour
  • 1 large Egg
  • 2 tablespoons Water
  • 2 tablespoons Spring onion
  • 2 tablespoons Olive oil
  • 1 for serving Lemon wedges
  • 0.25 teaspoon Salt
  • 0.125 teaspoon Black pepper

Instructions

  1. 1In a medium bowl, add the 250 g of whitebait, 2 tablespoons of gluten-free flour, 1 large egg, 2 tablespoons of water, 2 tablespoons of spring onion, 0.25 teaspoon of salt, and 0.125 teaspoon of black pepper.
  2. 2Gently stir the ingredients together until just combined. Be careful not to overmix.
  3. 3Heat 2 tablespoons of olive oil in a non-stick frying pan over medium-high heat, which is approximately 375°F (190°C).
  4. 4Carefully drop spoonfuls of the whitebait mixture into the hot pan, using the back of the spoon to flatten each fritter slightly.
  5. 5Cook the fritters for 2 to 3 minutes on each side, until they are golden brown and cooked through. The fish should appear opaque.
  6. 6Remove the fritters from the pan and serve immediately with lemon wedges.
