Ingredients

  • 1.5 lb Pork Belly
  • 3 tbsp Fish Sauce
  • 2 tbsp Soy Sauce
  • 4 tbsp Brown Sugar
  • 3 cloves Garlic
  • 1 medium Shallot
  • 0.5 tsp Black Pepper
  • 0.25 cup Rice Vinegar
  • 2 tbsp Sugar
  • 1 medium Carrot
  • 4 oz Daikon Radish
  • 4 cups Cooked Rice
  • 0.25 cup Cilantro
  • 2 stalks Green Onions

Instructions

  1. 1Cut pork belly into 1-inch cubes.
  2. 2In a bowl, combine fish sauce, soy sauce, brown sugar, minced garlic, minced shallot, and black pepper. Marinate pork belly in the mixture for at least 20 minutes.
  3. 3In a separate bowl, combine rice vinegar, sugar, julienned carrots, and julienned daikon radish. Let sit to quick-pickle.
  4. 4Heat a large skillet over medium-high heat. Add marinated pork belly and cook until caramelized and tender, about 20-25 minutes.
  5. 5Serve caramelized pork over cooked rice, topped with quick-pickled vegetables, cilantro, and green onions.
