Dairy-Free Vegetable Samosas

Ingredients

  • 2 cups All-purpose flour
  • 1/4 cup Vegetable oil
  • 1/2 teaspoon Salt
  • 1/2 cup Water
  • 1 cup Potatoes, boiled and diced
  • 1/2 cup Peas, frozen
  • 1/2 cup Carrots, diced
  • 1/2 cup Onion, chopped
  • 1 teaspoon Ginger-garlic paste
  • 1 teaspoon Green chilies, chopped
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Garam masala
  • 1/4 teaspoon Amchur (dry mango powder)
  • 2 cups Oil, for frying

Instructions

  1. 1In a bowl, mix flour, vegetable oil, and salt. Gradually add water and knead to form a stiff dough. Cover and let it rest for 30 minutes.
  2. 2In a pan, sauté onion until golden brown. Add ginger-garlic paste and green chilies and sauté for a minute.
  3. 3Add potatoes, peas, carrots, cumin powder, coriander powder, garam masala, amchur, and salt. Mix well and cook for 5 minutes.
  4. 4Divide the dough into small balls and roll each ball into a thin circle. Cut each circle into two halves.
  5. 5Form a cone with each half and fill it with the vegetable mixture. Seal the edges with water.
  6. 6Heat oil in a deep fryer and fry the samosas until golden brown and crispy.
  7. 7Serve hot with mint chutney or tamarind chutney.
