Ingredients

  • 2 cups All-Purpose Flour
  • 1/2 cup Water
  • 1/2 tsp Salt
  • 2 tbsp Coconut Oil
  • 1 cup Potatoes, diced
  • 1/2 cup Carrots, diced
  • 1/2 cup Onion, chopped
  • 1/2 cup Green Beans, chopped
  • 1 tbsp Curry Powder
  • 1/4 tsp Turmeric Powder
  • 1/4 tsp Chili Powder
  • 2 cloves Garlic, minced
  • 1 tsp Ginger, grated
  • 1/2 tsp Salt
  • 2 tbsp Coconut Oil, for cooking

Instructions

  1. 1In a large bowl, combine the 2 cups of All-Purpose Flour, 1/2 cup Water, and 1/2 tsp Salt. Add the 2 tbsp of Coconut Oil and mix until a dough forms. Knead the dough on a clean surface for about 5-7 minutes until it is smooth and elastic. Cover the dough with a damp cloth and let it rest for 15 minutes.
  2. 2While the dough rests, prepare the filling. Heat 2 tbsp of Coconut Oil in a 10-inch skillet over medium heat (325°F / 163°C). Add the 1/2 cup Onion, chopped, and 2 cloves Garlic, minced. Sauté for 2-3 minutes until the onion is translucent and the garlic is fragrant.
  3. 3Add the 1 cup Potatoes, diced, 1/2 cup Carrots, diced, and 1/2 cup Green Beans, chopped, to the skillet. Cook, stirring occasionally, for 10-12 minutes, or until the vegetables are fork-tender. They should be easily pierced with a fork.
  4. 4Stir in the 1 tbsp Curry Powder, 1/4 tsp Turmeric Powder, 1/4 tsp Chili Powder, 1/2 tsp Salt, and 1 tsp Ginger, grated. Cook for another 2-3 minutes, stirring constantly, until the spices are fragrant.
  5. 5Divide the rested dough into 4 equal portions. On a lightly floured surface, roll each portion into a thin circle, about 6-7 inches in diameter.
  6. 6Place about 1/4 of the vegetable filling in the center of each dough circle, leaving a 1-inch border around the edges.
  7. 7Carefully fold the edges of each roti dough circle over the filling to enclose it, pressing the seams gently to seal. You can shape them into a square or rectangle by folding the sides in.
  8. 8Heat a flat griddle or a 12-inch skillet over medium heat (350°F / 177°C). Cook each roti for 3-4 minutes per side, until golden brown spots appear and the roti is puffed slightly. Press gently with a spatula to ensure even cooking.
