Dairy-Free Vegetable Pulao (Rice Pilaf)

Ingredients

  • 2 cups Basmati Rice
  • 2 cups Mixed Vegetables (carrots, peas, beans)
  • 1 medium Onion
  • 1 tbsp Ginger-Garlic Paste
  • 1 tsp Whole Spices (cardamom, cloves, cinnamon)
  • 1 Bay Leaf
  • 4 cups Vegetable Broth
  • 2 tbsp Vegetable Oil
  • 0.25 cup Mint Leaves
  • 0.25 cup Cilantro
  • to taste Salt

Instructions

  1. 1Measure 2 cups of Basmati Rice into a bowl. Rinse the rice under cold running water until the water runs clear, then drain it well and let it soak in fresh cold water for 30 minutes.
  2. 2Place a large heavy-bottomed pot on the stove over medium heat (350°F / 175°C). Add the 2 tablespoons of Vegetable Oil. Once the oil is shimmering, add the 1 teaspoon of Whole Spices (cardamom, cloves, cinnamon) and the 1 Bay Leaf. Cook for 30 seconds until fragrant, being careful not to burn them.
  3. 3Add the 1 medium Onion, which has been chopped into small pieces, to the pot. Cook, stirring occasionally, for 8-10 minutes until the onion is soft and golden brown.
  4. 4Stir in the 1 tablespoon of Ginger-Garlic Paste and cook for 1 minute, stirring constantly, until it smells fragrant.
  5. 5Add the 2 cups of Mixed Vegetables (carrots, peas, beans) to the pot. Cook, stirring occasionally, for 5-7 minutes until the vegetables are slightly tender.
  6. 6Drain the soaked 2 cups of Basmati Rice and add it to the pot. Stir gently to combine with the vegetables and spices. Pour in the 4 cups of Vegetable Broth and add to taste Salt. Bring the mixture to a rolling boil over high heat.
  7. 7Once boiling, immediately reduce the heat to low, cover the pot tightly with a lid, and let it simmer for 20-25 minutes. Do not lift the lid during this time. The rice is cooked when all the liquid has been absorbed and the grains are tender.
  8. 8Remove the pot from the heat and let it stand, covered, for 5 minutes. This allows the steam to finish cooking the rice evenly. Fluff the rice gently with a fork. Stir in the 0.25 cup of chopped Mint Leaves and the 0.25 cup of chopped Cilantro. Serve the Dairy-Free Vegetable Pulao hot.
