Ingredients

  • 1 cup Red Lentils
  • 1 medium Onion
  • 1 medium Carrot
  • 6 cups Vegetable Broth
  • 2 tbsp Tomato Paste
  • 2 tbsp Olive Oil
  • 1 tsp Dried Mint
  • 0.5 tsp Red Pepper Flakes
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 2 tbsp Lemon Juice

Instructions

  1. 1Rinse the red lentils in a colander.
  2. 2Heat olive oil in a large pot over medium heat. Add chopped onion and carrot and cook until softened, about 5 minutes.
  3. 3Add tomato paste and cook for another minute.
  4. 4Add rinsed red lentils and vegetable broth to the pot. Bring to a boil.
  5. 5Reduce heat to low, cover, and simmer for 20-25 minutes, or until the lentils are very soft.
  6. 6Use an immersion blender to puree the soup until smooth.
  7. 7Stir in dried mint, red pepper flakes, salt, and pepper.
  8. 8Serve hot, garnished with a squeeze of lemon juice.
