Ingredients

  • 1 lb Ground Lamb
  • 0.5 medium Onion
  • 0.5 cup Breadcrumbs
  • 1 large Egg
  • 2 cloves Garlic
  • 1 tsp Cumin
  • 0.5 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 2 tbsp Olive Oil
  • 1 28 oz Canned Diced Tomatoes
  • 2 tbsp Tomato Paste
  • 0.5 cup Vegetable Broth
  • 0.25 cup Fresh Parsley

Instructions

  1. 1In a large bowl, combine ground lamb, grated onion, breadcrumbs, egg, minced garlic, cumin, paprika, salt, and pepper. Mix well.
  2. 2Form the mixture into small meatballs (köfte).
  3. 3Heat olive oil in a large skillet over medium heat.
  4. 4Add the köfte and cook until browned on all sides. Remove köfte and set aside.
  5. 5Add canned diced tomatoes, tomato paste, and vegetable broth to the skillet. Bring to a simmer.
  6. 6Return the köfte to the skillet. Reduce heat and simmer for 20 minutes, or until köfte are cooked through and sauce has thickened.
  7. 7Stir in fresh parsley before serving.
