Ingredients

  • 2 tablespoons Olive oil
  • 1 medium Onion
  • 1 medium Red bell pepper
  • 1 medium Green bell pepper
  • 1 cup Bulgur
  • 2 cups Vegetable broth
  • 1 tablespoon Tomato paste
  • 1 teaspoon Dried mint
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add onion, red bell pepper, and green bell pepper. Cook until softened, about 5 minutes.
