Ingredients

  • 2 tablespoons Olive Oil
  • 1 medium Onion
  • 1 medium Carrot
  • 1 medium Green Bell Pepper
  • 1 cup Coarse Bulgur
  • 2 cups Vegetable Broth
  • 2 tablespoons Tomato Paste
  • 1 teaspoon Dried Mint
  • 1/4 teaspoon Red Pepper Flakes
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Heat olive oil in a medium pot over medium heat.
  2. 2Add chopped onion and carrot, and cook until softened, about 5 minutes.
  3. 3Add chopped bell pepper and cook for another 3 minutes.
  4. 4Stir in bulgur and cook for 1 minute, stirring constantly.
  5. 5Add vegetable broth, tomato paste, dried mint, red pepper flakes, salt, and pepper.
  6. 6Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until bulgur is tender and liquid is absorbed.
  7. 7Fluff with a fork and serve hot.
