Ingredients

  • 1.5 lbs Ground turkey
  • 2 medium Sweet potatoes
  • 1 15 oz can Black beans
  • 1 15 oz can Kidney beans
  • 1 28 oz can Diced tomatoes
  • 1 count Onion
  • 1 count Bell pepper
  • 3 cloves Garlic
  • 2 tbsp Chili powder
  • 1 tsp Cumin
  • 1/2 tsp Smoked paprika
  • 2 cups Vegetable broth
  • 1 count Avocado
  • 1/2 cup Dairy-free sour cream

Instructions

  1. 1In a large pot, brown ground turkey over medium heat. Drain excess fat.
  2. 2Add diced onion and bell pepper to the pot and cook until softened.
  3. 3Add minced garlic, chili powder, cumin, and smoked paprika. Cook for 1 minute.
  4. 4Add diced sweet potatoes, black beans, kidney beans, diced tomatoes, and vegetable broth.
  5. 5Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until sweet potatoes are tender.
  6. 6Serve hot, topped with avocado and dairy-free sour cream, if desired.
