Dairy-Free Túrós Csusza with Smoked Tofu

A dairy-free take on a classic Hungarian pasta dish. Instead of traditional cheese, uses a creamy cashew sauce with savory smoked tofu.

Ingredients

  • 1 lb Gluten-free pasta (egg noodles)
  • 1 block Smoked tofu
  • 1 cup Cashews (raw, soaked)
  • 2 tbsp Nutritional yeast
  • 1 tbsp Lemon juice
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • to taste Salt and pepper
  • 2 tbsp Olive oil

Instructions

  1. 1Cook gluten-free pasta according to package directions. Drain and set aside.
  2. 2While gluten-free pasta is cooking, prepare the cashew sauce. Drain soaked cashews and blend with nutritional yeast, lemon juice, garlic powder, onion powder, salt, pepper, and enough water to create a smooth, creamy sauce.
  3. 3Dice smoked tofu into small cubes.
  4. 4Heat olive oil in a large skillet over medium heat. Sauté smoked tofu until lightly browned.
  5. 5Add cooked gluten-free pasta and cashew sauce to the skillet. Toss to combine and heat through.
  6. 6Serve hot, garnished with fresh herbs if desired.

Cashew cream mimics the texture and richness of cheese, while nutritional yeast provides a cheesy flavor.
