Ingredients

  • 1 lb Pasta (Wide Egg Noodles)
  • 1 cup Raw Cashews
  • 2 tbsp Nutritional Yeast
  • 1 tbsp Lemon Juice
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1 tsp Salt
  • 1/4 tsp Black Pepper
  • 4 strips Dairy-Free Bacon
  • 1 tbsp Olive Oil

Instructions

  1. 1Place the 1 cup of Raw Cashews in a small bowl and cover them completely with hot water. Let the cashews soak for at least 15 minutes, or until they are noticeably softened.
  2. 2Bring a large pot of water to a rolling boil over high heat (212°F / 100°C). Add the 1 lb of Wide Egg Noodles and cook for 7-10 minutes, stirring occasionally, until the noodles are tender but still firm to the bite. Drain the pasta thoroughly in a colander and set it aside.
  3. 3Drain the 1 cup of soaked cashews and transfer them to a blender. Add the 2 tbsp Nutritional Yeast, 1 tbsp Lemon Juice, 1/2 tsp Garlic Powder, 1/2 tsp Onion Powder, 1 tsp Salt, 1/4 tsp Black Pepper, and 1/2 cup of water to the blender.
  4. 4Blend the ingredients on high speed for 1-2 minutes, until the sauce is completely smooth and creamy. If the sauce is too thick, add 1-2 tablespoons of water at a time and blend again until it reaches a pourable, creamy consistency.
  5. 5In a separate medium skillet, cook the 4 strips of Dairy-Free Bacon over medium heat (300-325°F / 150-163°C) for 5-7 minutes, turning occasionally, until they are crispy and browned. Remove the bacon from the skillet and place it on a plate lined with paper towels to cool for 1-2 minutes, then crumble or chop it into 1/4-inch pieces.
  6. 6In a large 12-inch skillet or a large heavy-bottomed pot, heat the 1 tbsp Olive Oil over medium heat (300-325°F / 150-163°C). Add the 1 lb of cooked pasta and the prepared cashew sauce to the skillet.
  7. 7Stir well to combine the pasta and sauce, ensuring the pasta is evenly coated. Continue to heat, stirring occasionally, for 3-5 minutes, until the sauce is heated through and bubbling gently. Serve the Dairy-Free Túrós Csusza warm, topped with the crumbled 4 strips of Dairy-Free Bacon.
