Ingredients

  • 2 medium Zucchini
  • 8 oz Smoked Sausage (Csabai Kolbász)
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 1/2 cup Plant-Based Milk (Oat Milk)
  • 1 tbsp All-Purpose Flour
  • 2 tbsp Dill
  • 1 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 8 large Eggs

Instructions

  1. 1Grate the zucchini and dice the onion. Slice the smoked sausage.
  2. 2Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned and crispy.
  3. 3Add the diced onion and minced garlic to the skillet and cook until softened, about 3 minutes.
  4. 4Add the grated zucchini to the skillet and cook until tender, about 5 minutes.
  5. 5In a separate bowl, whisk together the plant-based milk and flour until smooth. Pour the mixture into the skillet and cook, stirring constantly, until the sauce thickens.
  6. 6Stir in the chopped dill, salt, and pepper.
  7. 7Whisk eggs in a bowl, add to the skillet and scramble until cooked through.
