Ingredients

  • 2 lbs Pork belly
  • 4 cups Coconut water
  • 1/2 cup Soy sauce
  • 2 tbsp Fish sauce
  • 2 tbsp Sugar
  • 4 cloves Garlic
  • 6 eggs Hard-boiled eggs
  • 1/2 tsp Black pepper
  • 6 cups Cooked rice

Instructions

  1. 1Cut pork belly into 1-inch cubes.
  2. 2In a large pot or Dutch oven, combine pork belly, coconut water, soy sauce, fish sauce, sugar, minced garlic, and black pepper.
  3. 3Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour.
  4. 4Add hard-boiled eggs to the pot and simmer for another 30 minutes, or until pork belly is tender and the sauce has thickened.
  5. 5Serve hot over cooked rice.
