Dairy-Free Taro Bubble Tea (Boba)

Ingredients

  • 2 tablespoons Taro Powder
  • 2 cups Coconut Milk
  • 2 cups Black Tea
  • 1/2 cup Tapioca Pearls (Boba)
  • 2 tablespoons Sugar
  • 4 cups Water

Instructions

  1. 1In a medium saucepan, combine the 4 cups of water and the 1/2 cup of tapioca pearls (boba). Bring to a boil over high heat, then reduce heat to medium and simmer for 15-20 minutes, or until the pearls are soft and chewy. Drain the pearls and rinse them under cold water to stop the cooking. Set aside.
  2. 2In a separate pot, brew 2 cups of strong black tea. Let the tea cool completely to room temperature before using it in the next step.
  3. 3In a blender, combine the 2 tablespoons of taro powder, 2 cups of coconut milk, 2 tablespoons of sugar, and the 2 cups of cooled black tea. Blend on high speed for 30-60 seconds, or until the mixture is completely smooth and no clumps of taro powder remain.
  4. 4Divide the cooked 1/2 cup of tapioca pearls evenly between two serving glasses.
  5. 5Pour the blended taro milk tea mixture over the tapioca pearls in each glass. If desired, add ice cubes to each glass. Serve immediately.
