Ingredients

  • 2 cups Rolled oats
  • 4 cups Unsweetened coconut milk
  • 1 cup Taro
  • 0.25 cup Shredded coconut
  • 2 tablespoons Brown sugar
  • 0.25 teaspoon Cinnamon
  • 0.125 teaspoon Salt

Instructions

  1. 1Peel the taro root and cut it into 1/2-inch cubes. You should have about 1 cup of taro pieces.
  2. 2In a large heavy-bottomed pot, combine the 4 cups of unsweetened coconut milk, 2 cups of rolled oats, the 1 cup of taro pieces, 0.25 cup of shredded coconut, 2 tablespoons of brown sugar, 0.25 teaspoon of cinnamon, and 0.125 teaspoon of salt.
  3. 3Place the pot over medium heat and bring the mixture to a boil. This should take about 5-7 minutes.
  4. 4Once boiling, immediately reduce the heat to low. Cover the pot loosely and let it simmer for 15-20 minutes. Stir occasionally to prevent sticking.
  5. 5Continue to simmer until the oats are tender and the mixture has thickened to your desired consistency. The taro should also be easily pierced with a fork.
  6. 6Remove the pot from the heat and let it stand for 2-3 minutes before serving.
  7. 7Serve the Dairy-Free Taro and Coconut Oatmeal hot.
