Ingredients

  • 1 cup Jasmine Rice
  • 8 cups Water
  • 6 pieces Dried Shiitake Mushrooms
  • 1/4 cup Dried Shrimp
  • 4 oz Pork Belly
  • 1 can Coconut Milk
  • 2 tablespoons Soy Sauce
  • 1/2 teaspoon White Pepper
  • 1 teaspoon Sesame Oil
  • 2 stalks Green Onions
  • 2 tablespoons Fried Shallots

Instructions

  1. 1Soak the dried shiitake mushrooms and dried shrimp in warm water for at least 30 minutes. Reserve the soaking liquid.
  2. 2Cut the pork belly into small pieces.
  3. 3In a large pot, combine the rice and water. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the rice is softened.
  4. 4Add the soaked shiitake mushrooms (chopped), dried shrimp (drained), and pork belly to the pot. Also add the reserved soaking liquid (strain it first).
  5. 5Stir in the coconut milk, soy sauce, and white pepper.
  6. 6Continue to simmer for another 20 minutes, stirring occasionally, until the porridge reaches your desired consistency.
  7. 7Stir in the sesame oil.
  8. 8Garnish with chopped green onions and fried shallots before serving.
