Ingredients

  • 1 cup All-purpose flour
  • 1 cup Cashews (soaked in hot water for 30 minutes)
  • 1 tablespoon Lemon juice
  • 2 tablespoons Sugar
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt
  • 1/4 cup Non-dairy milk (almond, soy, or oat)
  • 2 tablespoons Vegan butter or oil

Instructions

  1. 1Drain the soaked cashews and blend them with lemon juice, sugar, vanilla extract, and salt until smooth and creamy. Add a tablespoon of non-dairy milk at a time until desired consistency is reached. This will be the 'cheese' mixture.
  2. 2In a bowl, combine the cashew mixture with the flour until just combined. Do not overmix.
  3. 3Heat vegan butter or oil in a skillet over medium heat.
  4. 4Spoon the batter into the skillet, forming small, round pancakes.
