Dairy-Free Swedish Meatballs with Lingonberry Sauce

Ingredients

  • 1 lb Ground beef
  • 0.5 lb Ground pork
  • 0.5 cup Dairy-free breadcrumbs
  • 0.5 cup Oat milk
  • 1 Egg
  • 0.5 Onion
  • 2 cloves Garlic
  • 0.5 tsp Allspice
  • 0.25 tsp Nutmeg
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 1 cup Beef broth
  • 0.5 cup Dairy-free sour cream
  • 0.5 cup Lingonberry preserves

Instructions

  1. 1In a large bowl, combine ground beef, ground pork, dairy-free breadcrumbs, oat milk, egg, chopped onion, minced garlic, allspice, nutmeg, salt, and pepper.
  2. 2Mix well with your hands until just combined. Do not overmix.
  3. 3Roll the mixture into small meatballs (about 1 inch in diameter).
  4. 4Heat olive oil in a large skillet over medium heat.
  5. 5Brown the meatballs on all sides. Work in batches to avoid overcrowding the pan.
  6. 6Remove the meatballs from the skillet and set aside.
  7. 7Add beef broth to the skillet and scrape up any browned bits from the bottom of the pan.
  8. 8Stir in dairy-free sour cream and bring to a simmer.
  9. 9Return the meatballs to the skillet and simmer for 10-15 minutes, or until cooked through.
  10. 10Serve hot with lingonberry preserves and your favorite sides.
