Dairy-Free Sri Lankan Dhal Curry (Parippu)

Ingredients

  • 1 cup Red lentils
  • 2 cups Water
  • 1 tbsp Coconut oil
  • 1 small Onion
  • 2 cloves Garlic
  • 1 Green chilies
  • 0.5 tsp Turmeric powder
  • 1 tsp Curry powder
  • 5 Curry leaves
  • 0.5 cup Coconut milk
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Instructions

  1. 1Rinse the red lentils under cold water.
  2. 2In a pot, combine the rinsed lentils and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the lentils are soft and mushy.
  3. 3While the lentils are cooking, heat coconut oil in a separate pan over medium heat.
  4. 4Add onion, garlic, and green chilies and sauté until softened, about 3 minutes.
  5. 5Add turmeric powder, curry powder, and curry leaves and cook for 1 minute more, stirring constantly.
  6. 6Pour the sautéed spices into the cooked lentils. Stir well.
  7. 7Add coconut milk, salt, and pepper. Simmer for 5 minutes more, stirring occasionally.
  8. 8Serve hot with rice or roti.
