Ingredients

  • 1 lb Frozen spinach, thawed and squeezed dry
  • 8 oz Dairy-free feta cheese
  • 2 Scallions, finely chopped
  • 1/4 cup Fresh dill, chopped
  • 2 tablespoons Fresh mint, chopped
  • 1/2 cup Olive oil
  • 2 tablespoons Lemon juice
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 package Phyllo dough

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2In a large bowl, combine spinach, dairy-free feta, scallions, dill, mint, olive oil, lemon juice, salt, and pepper.
  3. 3Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Repeat with two more layers of phyllo.
  4. 4Cut the layered phyllo lengthwise into strips.
  5. 5Place a spoonful of the spinach mixture at the end of each strip and fold into a triangle shape.
  6. 6Brush the tops of the triangles with olive oil.
  7. 7Bake for 20-25 minutes, or until golden brown.
