Ingredients

  • 1.5 pounds Pork tenderloin
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 tablespoon Dried oregano
  • 3 cloves Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Coconut yogurt (unsweetened)
  • 0.5 Cucumber
  • 2 tablespoons Fresh dill
  • 1 tablespoon Lemon juice (for tzatziki)

Instructions

  1. 1Cut pork tenderloin into 1-inch cubes.
  2. 2In a bowl, whisk together olive oil, lemon juice, oregano, minced garlic, salt, and pepper.
  3. 3Marinate pork cubes in the mixture for at least 30 minutes.
  4. 4Thread marinated pork onto skewers.
  5. 5Grill souvlaki skewers over medium heat for 10-12 minutes, or until cooked through, turning occasionally.
  6. 6For the dairy-free tzatziki: Grate cucumber and squeeze out excess water. Combine coconut yogurt, grated cucumber, chopped dill, and lemon juice.
