Ingredients

  • 1 cup Lentils
  • 3 cups Vegetable broth
  • 2 tablespoons Olive oil
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 3 cloves Garlic
  • 2 tablespoons Tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dried thyme
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 3 large Sweet potatoes
  • 1/2 cup Coconut milk
  • 1/4 teaspoon Nutmeg

Instructions

  1. 1In a medium saucepan, combine the 1 cup of lentils and 3 cups of vegetable broth. Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender and the liquid is absorbed. Set aside.
  2. 2Preheat your oven to 375°F (190°C).
  3. 3Heat the 2 tablespoons of olive oil in a large skillet over medium heat. Add the 1 medium onion (chopped), 2 medium carrots (chopped), and 2 stalks celery (chopped). Cook, stirring occasionally, for 8-10 minutes, or until the vegetables are softened.
  4. 4Add the 3 cloves of garlic (minced) to the skillet and cook for 1 minute more, until fragrant.
  5. 5Stir in the 2 tablespoons of tomato paste, 1 tablespoon of Worcestershire sauce, 1 teaspoon of dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for 1 minute, stirring constantly.
  6. 6Add the cooked lentils to the skillet and mix everything together well. Transfer this lentil mixture to a baking dish.
  7. 7While the lentils are cooking, place the 3 large sweet potatoes (peeled and cut into 1-inch chunks) in a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium and cook for 15-20 minutes, or until the sweet potatoes are fork-tender. Drain the sweet potatoes thoroughly. Return them to the pot and mash them until smooth. Stir in the 1/2 cup of coconut milk and 1/4 teaspoon of nutmeg until creamy.
  8. 8Carefully spread the mashed sweet potato topping evenly over the lentil mixture in the baking dish.
  9. 9Bake in the preheated oven for 25-30 minutes, or until the topping is lightly golden brown and the filling is bubbling around the edges.
