Ingredients

  • 1 cup Green lentils
  • 4 cups Vegetable broth
  • 2 tablespoons Olive oil
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 3 cloves Garlic
  • 2 tablespoons Tomato paste
  • 1 tablespoon Worcestershire sauce (vegan)
  • 1 teaspoon Dried thyme
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 large Sweet potatoes
  • 1/2 cup Dairy-free milk (oat milk)

Instructions

  1. 1Rinse the 1 cup of green lentils. Place the rinsed lentils in a large heavy-bottomed pot and add the 4 cups of vegetable broth. Bring the mixture to a boil over high heat, then reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the lentils are tender.
  2. 2While the lentils are simmering, preheat your oven to 375°F (190°C). Peel and chop the 2 large sweet potatoes into 1-inch chunks. Place the sweet potato chunks in a medium saucepan, cover with water, and bring to a boil over high heat. Cook for 15-20 minutes, or until the sweet potatoes are very tender when pierced with a fork.
  3. 3Heat the 2 tablespoons of olive oil in a large skillet over medium heat. Add the 1 medium onion, 2 medium carrots, and 2 stalks of celery, all chopped into 1/2-inch pieces. Cook, stirring occasionally, for 8-10 minutes, until the vegetables have softened.
  4. 4Add the 3 cloves of minced garlic and the 2 tablespoons of tomato paste to the skillet. Cook for 1 minute more, stirring constantly, until the garlic is fragrant.
  5. 5Stir in the 1 tablespoon of vegan Worcestershire sauce, 1 teaspoon of dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for 30 seconds, stirring to combine.
  6. 6Drain the cooked lentils and add them to the skillet with the vegetable mixture. Stir everything together well to ensure the lentils are coated with the sauce and vegetables.
  7. 7Transfer the lentil and vegetable mixture to a baking dish. Once the sweet potatoes are tender, drain them well. Mash the cooked sweet potatoes with the 1/2 cup of dairy-free oat milk until smooth and creamy. Season the mash with a pinch of salt and pepper if desired.
  8. 8Carefully spread the mashed sweet potato topping evenly over the lentil mixture in the baking dish. Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the topping is lightly browned and the filling is bubbling around the edges.
