Ingredients

  • 2 cups Semolina Flour
  • 1 cup All-Purpose Flour
  • 1 cup Vegan Butter
  • 1/2 cup Warm Water
  • 2 tbsp Orange Blossom Water
  • 1 lb Pitted Dates
  • 1/4 cup Sesame Seeds
  • 1/2 tsp Ground Cinnamon
  • 2 tbsp Vegan Butter

Instructions

  1. 1In a large bowl, combine semolina flour, all-purpose flour, and melted vegan butter. Rub the vegan butter into the flour until it resembles coarse crumbs.
  2. 2Add warm water and orange blossom water. Mix until a dough forms. Cover and let rest for 30 minutes.
  3. 3Meanwhile, prepare the date filling. In a food processor, combine pitted dates, sesame seeds, cinnamon, and melted vegan butter. Process until smooth.
  4. 4Preheat oven to 350°F (175°C).
  5. 5Divide the dough into small balls. Flatten each ball and place a spoonful of date filling in the center.
  6. 6Shape the dough around the filling to form a cookie. You can use a ma'amoul mold for a decorative pattern.
  7. 7Place the cookies on a baking sheet lined with parchment paper.
  8. 8Bake for 18-20 minutes, or until lightly golden brown.
  9. 9Let cool completely before serving.
