Ingredients

  • 1 cup, rinsed Short-grain rice
  • 4 cups Vegetable broth
  • 1 can (13.5 oz) Full-fat coconut milk
  • 2 tablespoons Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1In a large pot, combine rice and vegetable broth.
  2. 2Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes, or until the rice is very soft and has absorbed most of the liquid.
  3. 3Stir in coconut milk and olive oil.
  4. 4Continue to simmer for another 15-20 minutes, stirring occasionally, until the mixture is creamy and the rice is completely broken down.
  5. 5Season with salt and pepper to taste. Serve hot.
