Dairy-Free Russian Shchi (Cabbage Soup)

Ingredients

  • 8 cups Beef broth
  • 1 medium head Cabbage
  • 2 medium Potatoes
  • 1 medium Carrots
  • 1 medium Onion
  • 2 tablespoons Tomato paste
  • 2 tablespoons Olive oil
  • 2 leaves Bay leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh dill

Instructions

  1. 1Shred cabbage. Peel and dice potatoes and carrots. Chop onion.
  2. 2In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until softened, about 5 minutes.
  3. 3Add carrots and tomato paste, cook for another 2 minutes.
  4. 4Pour in beef broth, bring to a boil. Add cabbage, potatoes, bay leaves, salt, and pepper.
  5. 5Reduce heat and simmer for 40 minutes, or until vegetables are tender.
  6. 6Remove bay leaves. Stir in fresh dill before serving.
