Dairy-Free Russian Blini with Vegan Caviar

Ingredients

  • 0.5 cup Buckwheat Flour
  • 2 tsp Baking Powder
  • 0.25 tsp Salt
  • 1 tbsp Sugar
  • 1.5 cups Non-Dairy Milk
  • 1 tbsp Apple Cider Vinegar
  • 2 tbsp Vegetable Oil
  • 1 cup Cashews
  • 1 tbsp Lemon Juice
  • 4 oz Vegan Caviar
  • 2 tbsp Fresh Dill

Instructions

  1. 1First, prepare the cashew cream: Place the 1 cup of cashews in a heatproof bowl and cover with very hot water. Let them soak for at least 30 minutes. Drain the cashews thoroughly. Add the drained cashews, 1 tablespoon of lemon juice, and 0.25 teaspoon of salt to a blender. Blend until the mixture is completely smooth and creamy, which may take a few minutes. Set this cashew cream aside.
  2. 2In a large mixing bowl, combine the 1 cup of all-purpose flour, 0.5 cup of buckwheat flour, 2 teaspoons of baking powder, and 1 tablespoon of sugar. Whisk these dry ingredients together until they are well combined.
  3. 3In a separate medium bowl, whisk together the 1.5 cups of non-dairy milk, 1 tablespoon of apple cider vinegar, and 2 tablespoons of vegetable oil until thoroughly mixed.
  4. 4Pour the wet ingredients from the medium bowl into the large bowl with the dry ingredients. Mix with a whisk or spoon until just combined. Be careful not to overmix; a few small lumps are okay. Overmixing can make the blini tough.
  5. 5Heat a non-stick griddle or a large frying pan over medium heat. The pan is ready when a drop of water sizzles and evaporates quickly. Lightly grease the pan with a tiny bit of extra vegetable oil if needed.
  6. 6For each blini, pour about 2 to 3 tablespoons of batter onto the hot griddle. Cook for 2 to 3 minutes on the first side, until small bubbles appear on the surface and the edges look set. Carefully flip the blini and cook for another 2 to 3 minutes on the second side, until golden brown and cooked through.
  7. 7Repeat step 6 with the remaining batter until all blini are cooked. You should have about 8-10 blini.
  8. 8To serve, arrange the blini on plates. Top each blini with a dollop of the prepared cashew cream, a spoonful of the 4 oz of vegan caviar, and a sprinkle of the 2 tablespoons of fresh dill.
