Ingredients

  • 1.5 lbs Beef chuck roast
  • 3 medium Beets
  • 0.5 medium Cabbage
  • 2 medium Potatoes
  • 1 large Onion
  • 2 medium Carrots
  • 2 tablespoons Tomato paste
  • 8 cups Vegetable broth
  • 2 tablespoons Olive oil
  • 2 leaves Bay leaf
  • 1 tablespoon White vinegar
  • 2 tablespoons Fresh dill
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Instructions

  1. 1Cut the 1.5 lbs beef chuck roast into 1-inch cubes. Season the beef cubes with 1 teaspoon salt and 0.5 teaspoon black pepper.
  2. 2Heat 2 tablespoons olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat, approximately 400°F (200°C). Brown the seasoned beef cubes on all sides until they have a nice crust, then remove the beef from the pot and set it aside.
  3. 3Add the 1 large chopped onion and 2 medium chopped carrots to the same pot. Sauté, stirring occasionally, for 5-7 minutes, or until the vegetables have softened. Add the 2 tablespoons tomato paste and cook, stirring constantly, for 1 minute until it darkens slightly.
  4. 4Return the browned beef to the pot. Pour in the 8 cups vegetable broth and add the 2 bay leaves. Bring the liquid to a boil, then reduce the heat to low, cover the pot, and let it simmer gently for 1 hour. The beef should be starting to get tender.
