Ingredients

  • 1 cup Arborio rice
  • 4 cups Dairy-free milk (oat or soy)
  • 1/2 cup Granulated sugar
  • 1 teaspoon Ground cardamom
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt

Instructions

  1. 1In a medium saucepan, combine the rice and dairy-free milk.
  2. 2Bring the mixture to a boil over medium heat, then reduce heat to low and simmer, uncovered, for 45-50 minutes, or until the rice is cooked through and the pudding has thickened.
  3. 3Stir frequently to prevent sticking.
  4. 4Stir in the sugar, cardamom, vanilla extract, and salt. Cook for another 5 minutes, stirring constantly, until the sugar is dissolved.
  5. 5Remove from heat and let cool slightly.
  6. 6Serve warm or cold, garnished with a sprinkle of cinnamon, if desired.
