Ingredients

  • 1 cup Red Lentils
  • 2 tbsp Olive Oil
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 tbsp Tomato Paste
  • 6 cups Vegetable Broth
  • 1 tbsp Dried Mint
  • 1 tsp Red Pepper Flakes
  • 0.5 tsp Smoked Paprika
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 2 tbsp Lemon Juice
  • 2 tbsp Dried Bulgur

Instructions

  1. 1Rinse the red lentils under cold water.
  2. 2Heat olive oil in a large pot over medium heat.
  3. 3Add onion and cook until softened, about 5 minutes.
  4. 4Add garlic and cook for another minute.
  5. 5Stir in tomato paste and cook for 1 minute.
  6. 6Add red lentils, vegetable broth, dried mint, red pepper flakes, smoked paprika, salt, and pepper to the pot.
  7. 7Bring to a boil, then reduce heat and simmer for 30 minutes, or until lentils are tender.
  8. 8Stir in bulgur, cook for 5 more minutes
  9. 9Stir in lemon juice before serving.
