Dairy-Free Poutine with Mushroom Gravy

Ingredients

  • 4 large Potatoes
  • 2 tbsp Olive oil
  • 2 tbsp Cornstarch
  • 2 cups Vegetable broth
  • 8 oz Mushrooms
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 1 tbsp Soy sauce
  • 1/2 tsp Thyme
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 cup Dairy-free cheese curds

Instructions

  1. 1Preheat your oven to 425°F (220°C). Wash the 4 large potatoes, then cut them lengthwise into fry shapes approximately 1/2-inch (1.25 cm) thick. In a large bowl, toss the cut potatoes with 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper until they are evenly coated. Spread the seasoned potatoes in a single layer on a large baking sheet and bake for 20 to 25 minutes, or until the fries are golden brown and crispy to the touch.
  2. 2While the fries are baking, prepare the gravy. Finely chop the 1/2 medium onion and mince the 2 cloves garlic. Heat a large skillet over medium heat. Add the chopped 1/2 medium onion and minced 2 cloves garlic to the hot skillet and cook for 3 to 5 minutes, stirring occasionally, until they are softened and fragrant.
  3. 3Slice the 8 oz mushrooms and add them to the skillet with the onion and garlic. Continue to cook for 5 to 7 minutes, stirring occasionally, until the mushrooms have released their liquid and are nicely browned.
  4. 4Sprinkle the 2 tbsp cornstarch evenly over the mushroom mixture in the skillet. Stir constantly for 1 minute to ensure the vegetables are coated and the cornstarch is cooked.
  5. 5Gradually whisk in the 2 cups vegetable broth and 1 tbsp soy sauce into the skillet. Increase the heat to medium and bring the mixture to a simmer, stirring frequently, for 5 to 8 minutes, until the gravy has thickened to your desired consistency. Stir in the 1/2 tsp thyme.
  6. 6Taste the gravy and, if desired, add the remaining 1/2 tsp salt and 1/4 tsp black pepper. Once the fries are golden brown and crispy, carefully remove the baking sheet from the oven.
  7. 7To assemble the poutine, divide the hot fries among four serving bowls. Spoon the warm mushroom gravy generously over the fries, then scatter the 1 cup dairy-free cheese curds evenly over the gravy-covered fries. Serve immediately.
