Ingredients

  • 4 large Russet potatoes
  • 2 cups Vegetable oil
  • 1 lb Cremini mushrooms
  • 4 cups Vegetable broth
  • 2 tbsp Nutritional yeast
  • 1 tbsp Tapioca starch
  • 1 cup Plant-based cheese curds
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1Wash the 4 large Russet potatoes. Carefully cut each potato lengthwise into 1/2-inch (1.25 cm) thick slices, then cut each slice into 1/2-inch (1.25 cm) wide sticks to create fries.
  2. 2In a large heavy-bottomed pot or Dutch oven, heat the 2 cups Vegetable oil over medium-high heat until it reaches 350°F (175°C). If you do not have a thermometer, drop a small piece of potato into the oil; it should sizzle vigorously.
  3. 3Carefully add the cut potatoes to the hot oil in batches to avoid overcrowding the pot, frying for 6-8 minutes per batch, turning occasionally, until the fries are golden brown and crispy. Using a slotted spoon, transfer the fried potatoes to a wire rack set over a baking sheet to drain excess oil, then sprinkle them immediately with 1 tsp Salt and 0.5 tsp Black pepper.
  4. 4While the fries are cooking, slice the 1 lb Cremini mushrooms into 1/4-inch (0.6 cm) thick pieces. In a medium saucepan, sauté the sliced mushrooms over medium heat for 5-7 minutes, stirring occasionally, until they have softened and released their liquid.
  5. 5Add the 4 cups Vegetable broth and 2 tbsp Nutritional yeast to the saucepan with the softened mushrooms. Bring the mixture to a simmer over medium-high heat, then reduce the heat to low and let it gently simmer for 15 minutes, allowing the flavors to meld.
  6. 6In a small bowl, whisk the 1 tbsp Tapioca starch with 2 tablespoons of cold water until smooth. Pour this mixture into the simmering mushroom gravy, stirring constantly, and continue to simmer for 2-3 minutes, or until the gravy has visibly thickened.
  7. 7To assemble, divide the hot, crispy fries among four plates. Ladle a generous amount of the warm mushroom gravy over the fries, then scatter 1 cup Plant-based cheese curds over the gravy. Serve the Dairy-Free Poutine Fries immediately while hot.
