- 3Place a 6-quart heavy-bottomed pot over medium heat (300°F / 150°C). Add the 2 tablespoons of olive oil. Once the oil is shimmering, add the chopped 1 large onion and minced 4 cloves garlic. Cook, stirring often, until the onion is softened and translucent, about 5 to 7 minutes.
- 4Add the drained and rinsed 1 lb cranberry beans, the 1 lb pumpkin (cut into 1-inch cubes), the 2 cups corn kernels, the 6 cups vegetable broth, the 1 teaspoon smoked paprika, the 1 teaspoon oregano, the 1 teaspoon salt, and the 1/2 teaspoon pepper to the pot. Stir everything together.
