  • 2 tablespoons Dairy-free milk (oat or soy)
  • 1 tablespoon Flaxseed meal
  • 3 tablespoons All-purpose flour
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/4 cup Oil for frying
  • 1 cup Dairy-free sour cream or applesauce (for serving)

Instructions

  1. 1Peel and grate the potatoes and onion using a box grater or food processor.
  2. 2Place the grated potatoes and onion in a clean kitchen towel or cheesecloth and squeeze out as much excess liquid as possible.
  3. 3Mix flaxseed meal with 3 tablespoons water, let sit for 5 minutes.
  4. 4In a large bowl, combine the squeezed potatoes and onion, dairy-free milk, flaxseed mixture, flour, salt, and pepper.
  5. 5Heat the oil in a large skillet over medium heat.
  6. 6Drop spoonfuls of the potato mixture into the hot oil, forming small pancakes.
  7. 7Cook for 3-4 minutes per side, or until golden brown and crispy.
  8. 8Remove the pancakes from the skillet and place them on a paper towel-lined plate to drain excess oil.
