  • 1/2 cup Unsweetened applesauce
  • 2 tablespoons Sugar
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 1 cup Dairy-free milk (oat or almond)
  • 2 tablespoons Oil for frying
  • 1 tablespoon Powdered sugar (for dusting)
  • 1/2 teaspoon Cinnamon

Instructions

  1. 1Peel, core, and dice the apples into small pieces.
  2. 2In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using).
  3. 3Add the dairy-free milk, vanilla extract, and applesauce to the dry ingredients. Mix until just combined. Do not overmix.

  5. 5Heat the oil in a large skillet over medium heat.
  6. 6Drop spoonfuls of batter into the hot oil, about 2-3 pancakes at a time.
