Ingredients

  • 1.5 lb Potatoes
  • 0.5 cup Olive oil
  • 0.5 medium Onion
  • 2 cloves Garlic
  • 1 14 oz can Canned crushed tomatoes
  • 1 tsp Smoked paprika
  • 0.25 tsp Cayenne pepper
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Instructions

  1. 1Cut potatoes into 1-inch cubes.
  2. 2Heat olive oil in a large skillet over medium-high heat. Add potatoes and cook until golden brown and tender, about 15-20 minutes.
  3. 3While potatoes are cooking, prepare the sauce. Heat 2 tablespoons of olive oil in a separate saucepan over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  4. 4Stir in crushed tomatoes, smoked paprika, cayenne pepper, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  5. 5Serve the potatoes topped with the spicy tomato sauce.
