Dairy-Free Patatas Bravas

A classic Spanish tapas dish of fried potatoes with a spicy dairy-free tomato sauce. Perfect as a side or light lunch.

Ingredients

  • 2 lbs Potatoes
  • 1 cup Olive oil
  • 0.5 medium Onion
  • 2 cloves Garlic
  • 1 tsp Smoked paprika
  • 0.25 tsp Cayenne pepper
  • 14.5 oz Diced tomatoes
  • 0.5 cup Vegetable broth
  • 1 tbsp Red wine vinegar
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1Peel and cube the potatoes into 1-inch pieces.
  2. 2Heat olive oil in a large skillet over medium-high heat. Fry the potatoes until golden brown and crispy, about 15-20 minutes. Remove from skillet and drain on paper towels.
  3. 3In a separate saucepan, heat 2 tablespoons of olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  4. 4Stir in the smoked paprika and cayenne pepper and cook for another minute, stirring constantly.
  5. 5Add the diced tomatoes, vegetable broth, and red wine vinegar. Bring to a simmer and cook for 10 minutes, allowing the sauce to thicken slightly.
  6. 6Season with salt and pepper to taste.
  7. 7Toss the fried potatoes with the spicy tomato sauce. Serve immediately.
