Ingredients

  • 1 lb Linguine pasta
  • 1 lb Shrimp
  • 1 bunch Asparagus
  • 1 cup Peas
  • 1 medium Zucchini
  • 1 cup Cherry tomatoes
  • 3 cloves Garlic cloves
  • 2 tbsp Lemon juice
  • 3 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Cook linguine pasta according to package directions. Reserve 1 cup of pasta water before draining.
  2. 2While pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1 minute, until fragrant.
  3. 3Add shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from the skillet and set aside.
  4. 4Add asparagus, peas, zucchini, and cherry tomatoes to the skillet. Cook for 5-7 minutes, until vegetables are tender-crisp.
  5. 5Add lemon juice, salt, and pepper to the skillet. Stir to combine.
  6. 6Add cooked pasta and shrimp to the skillet. Toss to coat with the sauce and vegetables. Add pasta water as needed to adjust consistency.
