Dairy-Free Pap and Akara

A classic Nigerian breakfast of Pap (cornmeal porridge) and Akara (bean cakes), prepared without dairy and nuts for a safe and delicious start to the day.

Ingredients

  • 1 cup Cornmeal (fine)
  • 4 cups Water
  • 2 tbsp Sugar
  • 8 cakes Akara (see separate recipe)

Instructions

  1. 1In a medium bowl, whisk together the 1 cup of cornmeal with 1 cup of cold water until you have a smooth, lump-free paste.
  2. 2In a large heavy-bottomed pot, bring the remaining 3 cups of water to a rolling boil over high heat. This should take about 5-7 minutes.
  3. 3Slowly pour the cornmeal paste into the boiling water while stirring constantly with a whisk. Continue stirring for 1-2 minutes to ensure no lumps form.
  4. 4Reduce the heat to low, cover the pot, and let the pap cook for 10-15 minutes, stirring every 2-3 minutes. The pap is ready when it has thickened to a porridge-like consistency and has a slightly glossy appearance.
  5. 5Stir in the 2 tablespoons of sugar until fully dissolved. Taste and add more sugar if desired.
  6. 6Serve the hot pap immediately with the 8 cakes of akara on the side.
