Dairy-Free Palak Tofu with Brown Rice

Ingredients

  • 1 block (14 oz) Firm tofu
  • 10 oz Spinach
  • 1 medium Onion
  • 1 tbsp Ginger-garlic paste
  • 1-2 Green chilies
  • 1 medium Tomato
  • 1 tsp Garam masala
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Cumin powder
  • 1/2 cup Coconut milk
  • 2 tbsp Vegetable oil
  • 1 tsp Salt
  • 1 cup Brown rice

Instructions

  1. 1Place 1 cup of brown rice and 2 cups of water in a medium saucepan. Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 40 minutes, or until the water is absorbed and the rice is tender. Let stand, covered, for 5 minutes.
  2. 2While the rice cooks, prepare the tofu and spinach. Cut the 1 block (14 oz) firm tofu into 1-inch cubes. Bring a medium pot of water to a rolling boil over high heat. Add the 10 oz of spinach and blanch for 2 minutes. Immediately drain the spinach and transfer it to a blender. Blend until you have a smooth puree.
  3. 3Heat the 2 tablespoons of vegetable oil in a large 10-inch skillet over medium-high heat (375°F / 190°C). Add the 1 medium onion, chopped, and sauté for 8-10 minutes, stirring occasionally, until it is golden brown and softened.
  4. 4Add the 1 tablespoon of ginger-garlic paste and 1-2 green chilies, finely chopped. Sauté for 1 minute until fragrant. Add the 1 medium tomato, chopped, and cook for 3-5 minutes, stirring, until it has softened.
  5. 5Stir in the 1 teaspoon of garam masala, 1/2 teaspoon of turmeric powder, and 1/2 teaspoon of cumin powder. Cook for 1 minute, stirring constantly, until the spices are fragrant.
  6. 6Pour the spinach puree into the skillet and stir to combine. Cook for 5 minutes, stirring occasionally, until the sauce has thickened slightly.
  7. 7Gently add the 1-inch tofu cubes to the skillet. Pour in the 1/2 cup of coconut milk and stir to coat the tofu. Bring the mixture to a gentle simmer over medium heat (300°F / 150°C) and cook for 10 minutes, allowing the flavors to meld and the tofu to heat through.
  8. 8Stir in the 1 teaspoon of salt. Serve the dairy-free palak tofu hot with the cooked brown rice.
