Ingredients

  • 1 pound Ground Pork
  • 0.5 pound Ground Beef
  • 1 medium Onion
  • 2 cloves Garlic
  • 0.5 teaspoon Ground Cloves
  • 0.5 teaspoon Ground Cinnamon
  • 1 teaspoon Dried Thyme
  • 0.5 cup Vegetable Broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 tablespoon Olive Oil
  • 2 Dairy-Free Pie Crust
  • 1 medium Potato
  • 4 cups Water

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2Peel the 1 medium potato and cut it into 1-inch cubes. Place the potato cubes in a medium pot and add 4 cups of water. Bring to a boil over high heat, then reduce heat to medium and cook for 15 minutes, or until the potato is fork-tender.
  3. 3While the potato is boiling, finely dice the 1 medium onion. Mince the 2 cloves of garlic. Heat the 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced onion and minced garlic and cook, stirring often, for 5-7 minutes, or until the onion is softened and translucent.
  4. 4Add the 1 pound of ground pork and the 0.5 pound of ground beef to the skillet with the onions and garlic. Cook over medium-high heat, breaking up the meat with a spoon, until the meat is completely browned, about 8-10 minutes.
  5. 5Stir in the 0.5 teaspoon ground cloves, 0.5 teaspoon ground cinnamon, 1 teaspoon dried thyme, 0.5 cup vegetable broth, 1 teaspoon salt, and 0.5 teaspoon black pepper. Cook for 1 minute, stirring constantly, until fragrant.
  6. 6Drain the water from the pot with the potato. Mash the cooked potato until smooth. Add the mashed potato to the meat mixture in the skillet and stir well to combine.
  7. 7Place one of the 2 dairy-free pie crusts into a 9-inch pie dish. Spoon the meat and potato mixture evenly into the pie crust. Place the second dairy-free pie crust over the filling. Trim any excess crust, then crimp the edges of the top and bottom crusts together to seal. Cut 3-4 slits in the top crust to allow steam to escape.
  8. 8Bake in the preheated oven for 50-60 minutes, or until the crust is golden brown and the filling is bubbling slightly through the steam vents.
