Ingredients

  • 1 tablespoon Olive Oil
  • 1 pound Ground Beef
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 tablespoons Chili Powder
  • 1 teaspoon Cumin
  • 1 can Diced Tomatoes
  • 1 can Corn
  • 0.5 cup Black Olives
  • 0.5 cup Vegetable Broth
  • 1.5 cups Masa Harina
  • 1.5 cups Water
  • 1 teaspoon Salt
  • 0.25 cup Coconut Oil

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, drain excess fat.
  3. 3Add chopped onion and garlic to the skillet and cook until softened.
  4. 4Stir in chili powder, cumin, diced tomatoes, corn, black olives, and vegetable broth. Simmer for 15 minutes.
  5. 5In a separate bowl, combine masa harina, water, salt, and melted coconut oil. Mix well to form a thick paste.
  6. 6Pour the ground beef mixture into a baking dish.
  7. 7Spread the masa harina mixture evenly over the ground beef.
  8. 8Bake for 30-40 minutes, or until the topping is golden brown and set.
  9. 9Let cool slightly before serving.
