Ingredients

  • 0.5 cup Unsweetened Coconut Flakes

  • 2 tablespoons Dairy-Free Custard Powder
  • 2 tablespoons Dairy-Free Milk
  • 2 cups Powdered Sugar
  • 1 cup Dairy-Free Chocolate Chips
  • 1 tablespoon Vegetable Shortening

Instructions

  1. 1In a medium heatproof bowl set over a saucepan of simmering water (or in a microwave-safe bowl), combine the 2 cups of Dairy-Free Chocolate Wafers, 0.5 cup Unsweetened Coconut Flakes, 0.5 cup Dairy-Free Butter, 0.25 cup Cocoa Powder, and 0.25 cup Granulated Sugar. Stir constantly until everything is melted and smooth, about 5-7 minutes.
  2. 2Pour the melted chocolate mixture into an ungreased 8x8 inch pan and spread it into an even layer. Place the pan in the freezer for 10 minutes to firm up.
  3. 3While the base is chilling, prepare the custard layer. In a medium bowl, beat together the 0.5 cup Dairy-Free Butter (this is a separate amount from the base), 2 tablespoons Dairy-Free Custard Powder, 2 tablespoons Dairy-Free Milk, and 2 cups Powdered Sugar until the mixture is smooth and creamy.
  4. 4Carefully spread the smooth custard mixture evenly over the chilled chocolate base in the 8x8 inch pan. Return the pan to the freezer for another 10 minutes to set the custard layer.
  5. 5In a separate medium heatproof bowl set over simmering water (or in a microwave-safe bowl), melt the 1 cup Dairy-Free Chocolate Chips with the 1 tablespoon Vegetable Shortening. Stir until the chocolate is completely melted and smooth, about 3-5 minutes.
  6. 6Gently pour the melted chocolate and shortening mixture over the set custard layer, spreading it to cover the entire surface evenly. Place the pan in the refrigerator and chill for at least 30 minutes, or until the top chocolate layer is firm to the touch.
  7. 7Once the Nanaimo bars are fully set, carefully cut them into 16 squares using a sharp knife. Serve immediately or store in an airtight container in the refrigerator.
