Dairy-Free Nasi Goreng (Indonesian Fried Rice)

Ingredients

  • 4 cups Cooked White Rice
  • 1 lb Chicken Breast
  • 3 tablespoons Soy Sauce
  • 2 tablespoons Sweet Soy Sauce (Kecap Manis)
  • 2 tablespoons Vegetable Oil
  • 3 cloves Garlic
  • 2 medium Shallots
  • 1 small Red Chili Pepper
  • 2 large Eggs
  • 1 cup Frozen Mixed Vegetables
  • 2 stalks Green Onions

Instructions

  1. 1Prepare your ingredients: Cut the 1 lb of chicken breast into 1/2-inch cubes. Mince the 3 cloves of garlic. Thinly slice the 2 medium shallots. Finely chop the 1 small red chili pepper. Chop the 2 stalks of green onions and set them aside for garnish.
  2. 2Place a 12-inch wok or large skillet over medium-high heat (approximately 400°F / 200°C). Add the 2 tablespoons of vegetable oil. Once the oil is shimmering, add the cubed 1 lb of chicken breast and cook, stirring occasionally, for 5-7 minutes, until it is browned on all sides and reaches an internal temperature of 165°F (74°C).
  3. 3Push the cooked chicken to one side of the wok, creating an empty space. Add the 3 cloves of minced garlic, the 2 thinly sliced shallots, and the 1 finely chopped red chili pepper to the empty side. Sauté these aromatics for 1 minute, stirring constantly, until they become fragrant.
  4. 4Crack the 2 large eggs into the wok. Scramble the eggs directly in the wok until they are fully cooked and set, which will take about 2-3 minutes. Use your spatula to break the cooked eggs into smaller pieces.
  5. 5Add the 4 cups of cooked white rice and the 1 cup of frozen mixed vegetables to the wok. Stir everything together thoroughly, using your spatula to break up any large clumps of rice. Continue to stir-fry for 3-5 minutes, until the rice is heated through and the vegetables are tender.
  6. 6Pour the 3 tablespoons of soy sauce and the 2 tablespoons of sweet soy sauce (kecap manis) evenly over the rice mixture in the wok. Stir everything very well to ensure the rice is evenly coated with the sauces and they are fully incorporated. Cook for another 2-3 minutes, stirring constantly, until all ingredients are heated through.
  7. 7Remove the wok from the heat. Garnish the Nasi Goreng with the chopped 2 stalks of green onions that you prepared earlier. Serve your Dairy-Free Nasi Goreng immediately.
