Ingredients

  • 1 cup Glutinous rice flour
  • 0.75 cup Water
  • 1 tsp Vegetable oil
  • 0.5 cup Roasted peanuts
  • 0.25 cup Sugar

Instructions

  1. 1In a medium bowl, combine the 1 cup of glutinous rice flour and the 0.75 cup of water. Stir with a spoon or spatula until a smooth, thick batter forms. Add the 1 tsp of vegetable oil and mix it in until fully incorporated. This helps prevent sticking.
  2. 2Pour the batter into a heatproof dish. Place the dish in a steamer basket over a pot of boiling water. Cover and steam for 15 to 20 minutes, or until the dough is cooked through and looks translucent and slightly shiny. The exact time will depend on the thickness of your dough.
  3. 3While the dough is steaming, prepare the peanut-sugar coating. Place the 0.5 cup of roasted peanuts into a food processor or a sturdy plastic bag. Pulse or crush them until they are broken into small pieces, but not a fine powder. Transfer the crushed peanuts to a small bowl and mix them thoroughly with the 0.25 cup of sugar.
  4. 4Once the glutinous rice dough is cooked, carefully remove the dish from the steamer. Let it cool slightly in the dish for about 5 minutes until it is warm enough to handle but not too hot. This slight cooling makes it easier to work with.
  5. 5Lightly dust a clean work surface or a plate with some of the peanut-sugar mixture. Turn the warm glutinous rice dough out onto the dusted surface. Cut the dough into small, bite-sized pieces, about 1-inch squares.
  6. 6Gently roll each piece of cut dough in the peanut-sugar mixture, ensuring it is fully coated on all sides. You can use your hands or two spoons to help coat them. Add more of the peanut-sugar mixture if needed to coat all the pieces.
  7. 7Serve the muah chee immediately while they are still warm and chewy.
